Tuna-Cheddar (Calcium-rich)
2 cups water
1 large potato, peeled and diced into 1/2-inch cubes
1/2 cup diced carrot
1/2 cup diced celery
1 small onion, chopped
1/4 cup margarine
1/4 cup flour
2 cups fat-free milk
3/4 pound sharp cheddar cheese, shredded
1 can (6.5 oz.) tuna, drained and flaked
1 can (8 oz.) cream style corn
Pinch of dried rosemary
Few drops hot pepper sauce
Pinch of salt
Chopped chives
- Place potato, carrots, celery, onion, and water in 3-quart saucepan. bring to boil, cover and simmer for 10 minutes. DO NOT DRAIN.
- Melt margarine in a small saucepan and blend in flour. Gradually stir in milk. Cook, stirring until smooth and thickened.
- Add cheese and stir until melted. Add to vegetable mixture along with tuna, corn, rosemary, and hot pepper sauce.
- Add salt to taste; serve with garnish of chives.
Servings: 8 Amount of calcium per serving: 395 mg.
