Tuna-Cheddar Chowder (Calcium-rich)

Tuna-Cheddar (Calcium-rich)

2 cups water
1 large potato, peeled and diced into 1/2-inch cubes
1/2 cup diced carrot
1/2 cup diced celery
1 small onion, chopped
1/4 cup margarine
1/4 cup flour
2 cups fat-free milk
3/4 pound sharp cheddar cheese, shredded
1 can (6.5 oz.) tuna, drained and flaked
1 can (8 oz.) cream style corn
Pinch of dried rosemary
Few drops hot pepper sauce
Pinch of salt
Chopped chives
  1. Place potato, carrots, celery, onion, and water in 3-quart saucepan.  bring to boil, cover and simmer for 10 minutes.  DO NOT DRAIN.
  2. Melt margarine in a small saucepan and blend in flour.  Gradually stir in milk.  Cook, stirring until smooth and thickened.
  3. Add cheese and stir until melted.  Add to vegetable mixture along with tuna, corn, rosemary, and hot pepper sauce.
  4. Add salt to taste; serve with garnish of chives.

Servings:  8           Amount of calcium per serving:  395 mg.

Calcium is one of the minerals needed to form healthy bones and teeth.
