Total Brand Muffins (Iron-rich)

Total Brand Muffins (Iron-rich)

1 cup flour
1/4 cup sugar
2 tsp. baking powder
2 tsp. baking soda
1/2 tsp.salt
1/3 cup butter
2 cups Total cereal
1 egg, beaten
1 cup buttermilk
1/2 cup raisins
  1. Combine flour, sugar, baking pawder, baking soda, and salt.
  2. Cut in butter until mixture resembles coarse crumbs.
  3. Stir in Total cereal flakes.
  4. Combine the egg and buttermilk; mix with dry ingredients until moistened.  Stir in raisins.
  5. Fill greased muffin pan 2/3 full.
  6. Bake at 400 degrees for 20 minutes.

Note:  If you don't have buttermilk you can make your own.  Add 1 Tbs. lemon juice or vinegar to 1 cup regular milk and let sit for a few minutes.

Yield:  9 muffins           Amount of iron per muffin:  6.4 mg.

If you don't eat enough food with iron your blood can't do its job well and you may feel tired, weak, cranky and are more likely to get colds and the flu.
