Swedish Meatballs (Iron-rich)

Swedish Meatballs (Iron-rich)

1/2 lb. ground beef
1 egg, slightly beaten
3 Tbs. bread crumbs
1 Tbs. minced onion
1/2 tsp. salt
1 Tbs. oil
1 can (16 oz.) pork and beans with tomato sauce
  1. Combine beef, egg, bread crumbs, onion, 1/2 tsp. chili powder, and salt.
  2. Shape into 12 meatballs.  In skillet, brown meatballs in oil.  Cover, and cook over low heat fro 10 minutes.
  3. Pour off excess fat.
  4. Stir in beans and rest of chili powder.
  5. Heat, stirring occasionally, until ready to serve.

Servings: 2    Amount of iron per serving:  12.6 mg.

The iron in meat is six times more absorbable than the iron in vegetables.
