Swedish Meatballs (Iron-rich)
1/2 lb. ground beef
1 egg, slightly beaten
3 Tbs. bread crumbs
1 Tbs. minced onion
1/2 tsp. salt
1 Tbs. oil
1 can (16 oz.) pork and beans with tomato sauce
- Combine beef, egg, bread crumbs, onion, 1/2 tsp. chili powder, and salt.
- Shape into 12 meatballs. In skillet, brown meatballs in oil. Cover, and cook over low heat fro 10 minutes.
- Pour off excess fat.
- Stir in beans and rest of chili powder.
- Heat, stirring occasionally, until ready to serve.
Servings: 2 Amount of iron per serving: 12.6 mg.
The iron in meat is six times more absorbable than the iron in vegetables.
