Sloppy Joe Creole (Iron-rich)
1 lb. ground beef
2 cups (16 oz.) canned tomatoes, undrained
1/2 cup chopped green pepper
1/2 cup chopped onion
2 cups Total or Product 19 cereal
1 tsp. salt
1/8 tsp. black pepper
8 hamburger buns, sliced and toasted
- Cook ground beef in a large fry pan over medium heat until browned, stirring frequently.
- Drain off excess fat.
- Stir n tomatoes, cutting into small pieces with spoon.
- Add green pepper, onion, cereal flakes, salt, and pepper.
- Stir and cover.
- Cook over low heat for 15 minutes stirring occasionally.
- Place 1/3 cup of meat mixture on the bottom half of bun and cover with top half of bun.
Servings: 8 Amount of iron per serving: 9.5 mg.
