Peanut Butter - Cereal Cookies (Iron-rich)

Peanut Butter - Cereal Cookies (Iron-rich)

4 cups Total Cereal
1 cup sugar
1/2 cup butter, softened
1/2 cup peanut butter
1 egg
3/4 cup flour
3/4 tsp. baking soda
  1. Heat oven to 375 degrees
  2. Finely crush cereal and set aside.
  3. Stir together sugar, butter, peanut butter and egg in large bowl.
  4. Stir in flour, baking soda and cereal.
  5. Drop by rounded teaspoonfuls about 2 inches apart onto a greased cookie sheet.  Flatten with fork dipped in sugar or water.
  6. Bake 8 - 10 minutes or until edges are light golden brown. 
  7. Cool 1 minute; remove from cookie sheet.

Yield:  3 dozen cookies               Amount of iron per 2 cookies:  5.8 mg.

 

An anemic child may show no signs of anemia or they may feel tired, have a poor appetite, look pale, or not grow or learn well.
