Meaty Spanish Rice Pie (Iron-rich)

Meaty Spanish Rice Pie (Iron-rich)

1 cup Product 19 or Total Cereal
1/2 cup milk
1/4 cup chopped onion
1 tsp. salt
1 lb. ground beef
1 2/3 cup (15 oz.) tomato sauce
1 cup uncooked instant rice
2 Tbs. chopped green pepper
1/4 tsp. chili powder
1/2 cup shredded American cheese
  1. Crush cereal flakes into crumbs.
  2. In a large mixing bowl, combine cereal crumbs, milk, onion and salt.
  3. Add ground meat and mix until combined.  Press mixture evenly around sides and bottom of a 9-inch pie pan to form a meat pie shell.
  4. In a medium-sized bowl, combine the tomato sauce, rice, green pepper, and chili powder.
  5. Spoon mixture into meat shell and spread evenly.
  6. Bake in an oven at 350 degrees about 30 minutes or until meat pulls away from side of pan.
  7. Remove from oven, sprinkle top with cheese and bake for 3 more minutes until cheese melts.
  8. Cut into wedges to serve.

Servings: 6   Amount of iron per serving: 6.9 mg.
