Meaty Spanish Rice Pie (Iron-rich)
1 cup Product 19 or Total Cereal
1/2 cup milk
1/4 cup chopped onion
1 tsp. salt
1 lb. ground beef
1 2/3 cup (15 oz.) tomato sauce
1 cup uncooked instant rice
2 Tbs. chopped green pepper
1/4 tsp. chili powder
1/2 cup shredded American cheese
- Crush cereal flakes into crumbs.
- In a large mixing bowl, combine cereal crumbs, milk, onion and salt.
- Add ground meat and mix until combined. Press mixture evenly around sides and bottom of a 9-inch pie pan to form a meat pie shell.
- In a medium-sized bowl, combine the tomato sauce, rice, green pepper, and chili powder.
- Spoon mixture into meat shell and spread evenly.
- Bake in an oven at 350 degrees about 30 minutes or until meat pulls away from side of pan.
- Remove from oven, sprinkle top with cheese and bake for 3 more minutes until cheese melts.
- Cut into wedges to serve.
Servings: 6 Amount of iron per serving: 6.9 mg.
