Marvelous Mac and Cheese (Calcium-rich)
2 cups uncooked elbow macaroni
1 Tbs. butter
3 Tbs. flour
3/4 tsp. salt
1/2 tsp. dry mustard
2 1/2 cups milk
2 1/2 cups shredded reduced-fat sharp cheddar cheese, divided
- Preheat oven to 375 degrees. Cook macaroni according to package directions.
- Meanwhile, melt butter in medium saucepan over medium heat. Blend in flour, salt and dry mustard. Gradually stir in milk. Cook, stirring until smooth and thickened.
- Remove from heat. Add 2 cups of cheese and stir until melted.
- Add drained macaroni to saucepan and toss with cheese sauce. Transfer mixture to an 8-9-inch square baking dish. Top with rest of cheese.
- Bake uncovered until hot and bubbly, about 20 minutes. Let stand for 5 minute before serving.
Servings: 6 Amount of calcium per serving: 663 mg.
Variation: Add sauteed chopped red peppers and broccoli florets before baking.
