Marvelous Mac and Cheese (Calcium-rich)

Marvelous Mac and Cheese (Calcium-rich)

2 cups uncooked elbow macaroni
1 Tbs. butter
3 Tbs. flour
3/4 tsp. salt
1/2 tsp. dry mustard
2 1/2 cups milk
2 1/2 cups shredded reduced-fat sharp cheddar cheese, divided
  1. Preheat oven to 375 degrees.  Cook macaroni according to package directions.
  2. Meanwhile, melt butter in medium saucepan over medium heat.  Blend in flour, salt and dry mustard.  Gradually stir in milk.  Cook, stirring until smooth and thickened.
  3. Remove from heat.  Add 2 cups of cheese and stir until melted.
  4. Add drained macaroni to saucepan and toss with cheese sauce.  Transfer mixture to an 8-9-inch square baking dish.  Top with rest of cheese.
  5. Bake uncovered until hot and bubbly, about 20 minutes.  Let stand for 5 minute before serving.

Servings:  6                   Amount of calcium per serving:  663 mg.

Variation:  Add sauteed chopped red peppers and broccoli florets before baking.
