Macho Beanos

2 cups dry lima beans
1 tsp. salt
1 pound ground meat
1/2 cup sliced onions
2 cloves garlic, crushed
1 tsp. red pepper
2 Tbsp. cooking oil
1 15-oz. can cut tomatoes, plus liquid
1 Tbsp.chili powder
1/2 cup grated sharp cheddar cheese
  1. Soak beans overnight in cold water; drain.
  2. Cover beans with 6 cups cold water, bring to a boil, then reduce heat and simmer for 1-3 hours, until almost tender.  Add water as needed. 
  3. Add salt the last half hour. 
  4. Drain and reserve 1 to2 cups liquid.
  5. Brown meat, onion, garlic, and pepper in oil.  Add tomatoes, chili powder, lima beans, and cheese.
  6. Put into a greased baking dish.  Add enough of the reserved liquid to barely cover beans.
  7. Bake at 350 degrees for 1 hour.
Makes 6 1-cup servings.
