1/2 cup onion, chopped
2 Tbsp. water
Cooking spray
3 cups bread stuffing cubes
1/3 lb. Canadian bacon, thinly sliced, cut into bite-size pieces
1 cup (4oz.) reduced-fat sharp Cheddar cheese, shredded
3 eggs
2 egg whites
2 cups fat-free milk
1/2 tsp. dry mustard
1/2 tsp. onion salt
- Microwave onion and water on HIGH for 2 minutes, stirring occasionally.
- Place stuffing cubes in a 12x8x2-inch baking dish that had been coated with a cooking spray.
- Sprinkle with onion, ham, and cheese.
- In a seperate bowl, mix eggs, milk, and seasonings; pour over stuffing mixture.
- Cover and refrigerate overnight.
- Bake, uncovered, at 325 degrees for 1 hour. Let stand 10 minutes before serving.
Makes 8 servings.
