Jean Alice Pancakes (Iron-rich)

Jean Alice Pancakes (Iron-rich)

2 eggs
1 1/4 cups flour
3/4 cup Malt-O-Meal
1 tsp. baking soda
1 tsp. salt
1 Tbs. baking powder
1 Tbs. sugar
2 cups buttermilk
2 Tbs. oil
  1. Beat eggs in mixer bowl.
  2. Add remaining ingredients and beat until smooth.
  3. Bake on hot griddle (Griddle is hot enough when droplets of water "skip" along the griddle).
  4. For lighter batter, add more buttermilk.

Yield:  8  6-inch pancakes           Amount of iron per pancake:  6.5 mg.
