Whole Wheat Chunky Monkey Muffins
Preheat oven to 400 degrees. Line 12 muffin cups with foil or paper liners.
Mix together: 1 C. uncooked old-fashioned or quick oats
3 T. sugar (dark brown, if you prefer)
1/2 Cup white/ flour and 1/2 Cup whole wheat flour
1/2 teaspoon salt
2 1/2 t. baking powder
2 tsp. cinnamon
Add: 1 egg, 1 cup mashed banana, 1/4 C. milk and 2 T. canola oil and 1/2 cup of your favorite dried fruit and/or nuts. Mix just until blended. Fill muffin cups 2/3 full. Sprinkle additional flakes of oats on top. Bake 20-25 minutes or until toothpick inserted in center comes out clean. Cool.
If desired, melt low sugar preserves in the microwave for 10-20 seconds and spread on the cooled tops of muffins.
