Pasta Primavera
This healthy version of a classic will prove to be a favorite with family and friends.
1 cup each, broccoli florets, sliced carrots, sliced zucchini
1 cup whole wheat macaroni or rotini pasta
Sauce: 1 tablespoon flour
1 tablespoon soft margarine
1 cup skim (fat-free) milk
1/4 teaspoon dried basil
1/8 tsp black pepper
2 tablespoons Parmesan cheese
1. Steam vegetables until crisp tender.
2. Cook pasta according to package directions.
3. In a small saucepan, melt margarine and blend in flour. Gradually stir in milk, basil and pepper.
4. Cook over medium heat, stirring contantly, until sauce thickens.
5. Remove from heat and blend in cheese. Pour over hot vegetables. Add pasta and mix together.
