Crunchy Corn Salad
- 1 cup cherry tomatoes, halved
- 1 medium head butter lettuce, rinsed well and dried
- 1 small red onion, peeled and diced
- 2½ cups fresh or frozen corn kernels, thawed and drained
- 4 tablespoons freshly chopped basil
- 6 slices of turkey bacon, cooked crisp and crumbled
- 1/3 cup Hidden Valley® The Original Ranch® Dressing
In a large bowl, combine the corn, onion, turkey bacon, and cherry tomatoes. Stir in the Hidden Valley® The Original Ranch® Dressing and toss until well coated. Arrange the lettuce leaves to make a small cup. Spoon the corn mixture into each of the lettuce cups and sprinkle with the chopped basil. Season with salt and pepper and serve chilled.
