Creamy Potato Soup

Creamy Potato Soup

You will love this yummy soup that features onions, celery and carrots as well as potatoes.

Servings:  6           Preparation Time:   20 minutes              Total Time:   90 minutes

 

 

Ingredients:

  • 3 tablespoons butter
  • 1 onion, diced
  • 4 large potatoes, cubed
  • 3 tablespoons parsley, chopped
  • 3 stalks celery and leaves, chopped
  • 2 large carrots, diced or grated
  • 2 teaspoons salt
  • ¼ teaspoon paprika
  • 1½ cups boiling water
  •  White sauce (see recipe below)

Directions:

Sauté onion in butter until tender.  Add remaining ingredients except white sauce and cook until vegetables are tender, about 20 minutes.  Add white sauce and stir until blended.  Simmer on low for about an hour; potatoes should be very tender.

White Sauce:

  • 4 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 4 cups milk

Melt butter; stir in flour and seasonings.  When smooth, add milk and stir constantly until thickened.
